Replacement

OMG YOU GUYS. Is anyone else mourning the loss of the Cookie Sundae on the Applebees dessert menu? IT IS NOT NECESSARY to have 2 brownie items to take away the cookie sundae which I treated myself to a few times a month! Say what you will about Applebees, but this cookie sundae was worth a special stop.



I've been pouting & complaining that "nowhere as good desserts" & rolling my eyes at cakes & brownies since I found out the news. 
UNTIL a blogger that I follow posted a recipe for a Chocolate Chip Cookie Pie.  Ok, sounds weird right. I want my cookie, in cookie form.  Not in PIE form. I pictured it like pudding or something with chocolate chips.  Not great & not a cookie. 

Since Lincoln was blessed with a fake snow day yesterday, I decided to try out the recipe anyway. I mean it couldnt hurt to taste test.  What happened is quite literally the greatest thing since sliced bread!!!!!!!!!

Before I knew it.....This had happened. See that missing quarter of the pie piece? In. My. Tummy.
 
Ok so, I guess I should preface this by saying that everyone is looking for different things in a dessert.  I go through moods & phases.  For whatever reason, this hit the spot!  If I show you the ingredients dont judge me.  There's ALOT of butter. But that's sort of what makes it amazing.  The butter & sugar mix together & form this amazing crust on the top/edges of the pie...while leaving the inside fluffy & soft... & well buttery.  Its like a half baked cookie that's supposed to be that way!  Buttery & fluffy & cookie-ish all in a slice! With ice cream. I have no words. 
 
Here's the recipe.  Treat yourself.  You deserve it.
 
(PS. The recipe is super easy. 100 bonus points!!!)
 
Chocolate Chip Cookie Pie
2 eggs
1/2 cup flour
1/2 cup sugar
1/2 cup packed brown sugar
1 cup butter, melted and cooled to room temperature
1 cup chocolate chips
1 unbaked pie shell
whipped cream or ice cream
 
Preheat oven to 325. In large bowl, beat eggs until foamy. Beat in flour, sugar and brown sugar until well blended. Blend in melted butter. Stir in chocolate chips. Pour into pie shell. Bake for 60 minutes.
Serve warm with ice cream.
